Edible cookie dough!  One of our favorite indulgences around this house.  If you’re on a vegan and gluten free diet, cookie dough kind of falls by the wayside.  At least it did for me.  But I don’t think it will any more after you try this recipe from Leite’s Culinaria with the tweaks I’ve added below.  Please let me know if you try it, and any changes you make, in the comments.

Why I Love This:

  • It tastes just like Tollhouse cookie dough (at least I think so ;-)
  • It’s quick and easy to make.
  • You can easily make it vegan with vegan butter, cocoa nibs, and almond milk.
  • You can nibble on it from the refrigerator for a few days.

Ingredients:

I have listed the ingredients I use to make this mostly vegan and gluten free.  Regular flour, butter, sugar, milk, chocolate can be used as you wish.

Directions:

  1. Soften butter to room temperature
  2. Preheat oven to 350 degrees
  3. Spread flour on a baking sheet and toast for 5 minutes
  4. Cool flour completely before using it in the recipe
  5. Cream butter and sugar until very soft and sugars are mixed in well
  6. Add in the milk and vanilla, mix well
  7. Slowly add the flour and salt, mix well
  8. Stir in the chocolate chips
  9. Refrigerate for up to 3 days.

That’s pretty much it!  Super easy, and super yummy edible cookie dough.  I must say it’s a little dangerous to have it in our house because I can’t stop eating it!  So we do have to limit the number of times we make it.  But when we do, it’s such an awesome indulging treat.  It’s great by itself, on ice cream, or with a glass of almond milk after dinner.  I have on my bucket list to make it into cookie dough balls for our next game night.  We’ll see if I end up getting around to doing that!  Let me know what your favorite way is to eat it.  And let’s compare notes.
