Mediterranean Veggie Burger

Mediterranean veggie burgers are my all-time favorite veggie burger recipe.  These don’t pretend to be meat.  They have their own unique flavor with a nod to the Mediterranean Sea.

Make these as burgers and serve with sauce and a nice soft roll, or prep as small patties with sauce as an appetizer.  This recipe is good for 4 burger-size servings, or double it for a party.

Note: Give or take on the various measurements for the Mediterranean Veggie Burger ingredients to your liking.  This recipe is quite flexible.

Ingredients:

BURGER:

  • 2 cans cannellini beans
  • 1/2 cup chopped artichokes (I use marinated)
  • 1/4 cup chopped roasted red peppers
  • 1/4 cup chopped green olives
  • 1/4 cup feta cheese
  • 2 Tablespoons chopped parsley
  • 4 Tablespoons flour or cornstarch (I use Pamela’s Gluten Free Flour)
  • salt and pepper to taste
  • olive oil for cooking

SAUCE:

  • 1/3 cup vegan mayo
  • 1 Tablespoon lemon juice
  • 1 Tablespoon chopped capers

BREAD:

  • big soft rolls (gluten free if necessary)

TOPPINGS (IF DESIRED):

  • crisp lettuce or spinach
  • avocado

Directions:

1.  Rinse the beans in a fine mesh strainer with cold water and add to a large mixing bowl.

2. Mash the beans to create a paste.

3. Mix in the chopped artichoke hearts, roasted red peppers, olives, parsley, and flour.  Salt and pepper to taste.

4. Form the dough into a patty and fry in a skillet on medium/low with heated olive oil.

5. Cook until both sides have browned.  Sometimes I need to break the patties into more of a hash to get it all to cook through, and it tastes fine that way too.
